Reconstructed rim fragment of Earthenware sugar pottery jar.
This jar (the example with the hole at the top) is used during sugar production. During the process, liquid from pressed sugar cane was boiled into a syrup and then ladled into sugar moulds (this has been added to demonstrate the two jars working together). The liquid cooled and crystallised into a sugar loaf inside mould, and excess liquid dripped out of hole in the base into a jar beneath (example shown here). - Excavation
